Just about everyone knows that fruits and vegetables are good for us – and that they look good too! But fruits’ and vegetables’ vibrant colors contribute to more than just a pretty plate. Fruits and vegetables get these colors from natural pigments called phytochromes, specifically carotenoids (yellow, orange, and red) and anthocyanins (red, purple, and blue). Chlorophyll is another plant pigment – and a phytonutrient – that gives fruits and vegetables their green/white color. Phytochromes give fruits and vegetables their bright colors – and also many of their health benefits!
The colorful pigments in fruits and vegetables are rich in antioxidants, vitamins, and minerals, contributing to a healthy diet. Antioxidants help to trap free radicals in your body, which can cause damage to our organs.
Here’s what those colors of the rainbow on your plate can do for your health1:
- Blue and purple: Blackberries, blueberries, plums, red cabbage, and eggplant can help with memory function and urinary tract health.
- Yellow and orange: Apricots, cantaloupe, papayas, squash, and carrots can help with heart and vision health and immune function.
- Yellow and green: Avocados, green apples, limes, artichokes, leafy greens, and peas can help with vision health and strong bones and teeth.
- Red: Tomatoes, watermelon, cranberries, beets, radishes, and red potatoes can help with heart health, memory function, and urinary tract health.
- White and green: Leeks, garlic, onions, and cauliflower can help with heart health and cholesterol control.
Other foods that are high in antioxidants are white, green, and black teas, dark chocolate, and wine – all nice treats when consumed in moderation.
As the weather warms, fresh fruits and vegetables are plentiful, but frozen is just as healthy and is available year-round. So add some color to your plate with raw or cooked fruits and vegetables to give your health a boost of antioxidants and nutrients. An added bonus? Filling up on fruits and vegetables can help curb your appetite for sugary or fatty snacks.
